Marination

Marination also known as "marinading" is the process of soaking foods in a seasoned liquid before cooking. "or acid liquid " The liquid in question, the 'marinade' often consists of a vinegar (or other acidic liquid) and oil mixture. It can also be red or white wine, and can contain herbs.

It is commonly used to flavor foods and to tenderize tougher cuts of meat. The process may last between seconds to days. Different marinades are used for different cuisines. In the Indian cuisine the marinade is prepared with yoghurt and other spices.
