Tripe
Tripe is the
stomach of various
ruminating animals. Classified as
offal, most tripe used for cooking is taken from
cows. Of the cow's four stomachs the first three can be used as tripe. The traditional
British dish Tripe and onions and the
French dish Tripes à la mode de Caen (tripe
Caen style) are well-known tripe dishes.
